I’m excited to share one of my new FAVORITE desserts. (And I have a lot of favorites, trust me!)
I’ve been a milk chocolate fan forever, but over the past few years I’ve slowly migrated to being more of a dark chocolate fan. In fact I think as of today, I really prefer dark chocolate to milk chocolate. #what
Don’t get me wrong I’ll still take either one, because chocolate IS chocolate after all!
I recently made this Chocolate Flourless Cake for my hubby’s birthday. We are in full birthday mode around here, we have all five of our birthdays within a three-month time span. So just as I put the birthday candles away I’m usually hunting for them again. It’s definitely a very fun season for us. Tiring, but fun.
This cake is amazing and if you are a dark chocolate fan you’ll absolutely love it even more! It’s rich and delicious. It’s also a great option if you are trying to cut down on flour made desserts, but not if you are trying to cut down on dark chocolate or butter. Ha!
Chocolate (Flourless) Cake
Ingredients:
- 1/2 cup white sugar
- 1/2 cup water
- 1/4 tsp salt
- 17.5 ounces of dark chocolate (usually 5 bars) – 70% dark chocolate
- 1 cup unsalted butter
- 6 eggs
Instructions:
- Preheat oven to 300 degrees F. Grease one 10 inch round cake pan, save for later. In a small saucepan over medium heat combine water, salt, and sugar. Stir until completely dissolved and remove from heat and set aside.
- In a microwave (or stove top) melt the chocolate thoroughly. Then pour the melted chocolate into a large mixing bowl.
- Next cut the butter into small pieces and add to the melted chocolate using a mixer, one piece at a time. Then beat in the sugar-water. Lastly slowly beat in the eggs, also one at a time. Then pour the batter into the prepared pan.
- Place the cake pan into a larger pan and fill the larger pan up with boiling water, halfway up to the sides of the cake pan. Bake the cake in the water bath for 45 minutes. (The cake will tend to look wet when done.)
- Chill the cake overnight in the pan for best results. Finally…enjoy, and obviously – save a piece for me!
