Hello lovelies! I am thrilled to share with you a new blog series – we’re talking Easy Dinner Recipes! I am going to post a recipe every Friday this year, which at then end of the year will total 50 recipes! You’ll want to keep an eye on the Cooking page for all the latest and greatest!
Each recipe will fall under the category of “easy,” my favorite kind of recipe. They will also be family friendly (serve @4-6), be healthy, and usually be able to be prepared in only one pot.

It is possible to eat healthy foods while keeping prep to a minimum. As a personal trainer, I get asked a lot of questions about foods and I will be using these posts to share my little tidbits regarding how to eat healthier for you and your family.

One of my favorite tips is to have a themed menu night. We have incorporated “Mexican Mondays.” Typically Mondays are busier nights for us and have a super simple dinner that I can whip up between carpool duties and signing permission slips really helps. Plus we can personalize a little bit, many MM nights I just prepare some ground meat and then do a bar of toppings. Other nights, I’ll prepare more of a casserole like La Bamba. This is a family favorite that also makes a great topping for nachos. Enjoy!!!
