When you need a quick breakfast, these Breakfast Cookies are the answer! I remember eating these as a child myself. They are so yummy. I asked my mom for the recipe several years ago, and recently made up a batch for my early morning swimmer. They are super easy to make and very healthy too!
Recipe – Quick Breakfast Cookies
Ingredients:
2/3 cup butter
2/3 cup honey
1 egg
1 tsp vanilla
3/4 cup unbleached or whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cup uncooked oats
1 cup shredded cheddar cheese
1/2 cup wheat germ or bran
1/2 cup browned sausage (drained)
Directions:
Cream together first four ingredients until smooth. Add remaining ingredients and mix well. Drop by teaspoonfuls onto greased baking sheets. Bake @350 for 12-15 minutes, cool for a minute, then place on racks to cool completely.
