My sweet daughter Ainsley wanted to make Despereaux Soup (based on the movie). I found a great recipe over here. Ainsley has been planning and cooking dinners for us one night a week. She is a great cook and baker! I love having the help and I love seeing her develop a new talent for cooking, she is a natural.
So last night’s dinner was not that simple, mainly because it was the first time we had ever made it. My title does not say “simple,” for that reason. It only took about an hour, but there are quite a few ingredients and steps. It still made for a fairly easy weeknight dinner, and it will be easier to make now that we have made it once.
The yummy soup is full of veggies – zucchini, butternut squash, carrots, celery, onion, green pepper, leek, mushrooms…you roast them first, boil them next, puree, and then add tomato sauce and cream.
This soup makes for a great dinner on a fall night or would be a wonderful addition to holiday gatherings.
I can’t wait to have some for lunch today!
